Sour pickled green mustard is pickled mustard cabbage or Kai choi. The mustard cabbages are briefly blanched. They are then dried and placed in jars with salt. During the fermentation, they are put on heavy weights in order to shrink as much as possible. The pickled mustard cabbage tastes like salt and sour at the same time.
